Banana Oatmeal Pecan Bread

 
 
Ingredients -
1/2 cup Margarine, room temperature
1/4 cup Honey
2 Eggs
3 Bananas, mashed
1/4 cup Buttermilk
1 teaspoon Vanilla
1 teaspoon Baking Powder
1 teaspoon Baking Soda
1/2 teaspoon Salt
1/2 cup Oats
2 cups Whole Wheat Flour
1 cup Pecans, coarsely chopped

 
 
Preparation:

Preheat oven to 350F. In a medium sized bowl, cream together butter and honey until mixture is smooth.

Beat in eggs one at a time. Stir in bananas, buttermilk and vanilla. When well blended, mix in baking powder, soda and salt. Blend in the rest of the ingredients.

Turn mixture into a buttered loaf pan 9 x 5 x 3-inches.

Bake for 55 minutes.

Cool on wire rack.
